Here we go... again.

I have this problem where I always think I would like to start a blog... one post goes up. Then I stop. Yet EVERY time I go out, I take pictures of my food and think "oh, I should blog about this place because it was SO good."

So I am going to backtrack to some of my past food adventures.

July, 2011. Jackson Hole, WY

If you had told me that I would ever vacation in Jackson Hole, WY, I probably would have laughed in your face. BUT when it's a free vacation, yes please!! They have a small, but delicious foodie scene. I didn't get too many pictures but I will tell you that you have to go to Snake River Grill. (I suggest making a reservation during the busy season). We sat at the bar and it was a blast! A couple a few seats down got the homemade doughnuts and we were all salivating over them! They had said they would never be able to eat all of it, would we like to try it?? Um, yes. Yes I would. So they shared and sure enough, it was like heaven in my mouth. They served them with a vanilla creme sauce, raspberry coulis, and a chocolate sauce.

Then we found this adorable little place called Cafe Genevieve.



















They had a few tables inside, but a gorgeous patio. We decided it looked right up our foodie alley. The menu changes based on seasonal availability.

Snake River Brewing Co. has some REALLY good beers. You can find them all over Jackson Hole.




















I had the venison chop, cooked medium. They served it over a jalapeno-bacon polenta cake and sauteed spinach. (I might be drooling a little just thinking about it, and it's only 10 am)





















My mom had a salad that we are still talking about. It was a warm arugula salad served with a lemon vinaigrette, asparagus, pancetta, and a soft poached egg. Once you cracked open that yolk, it mixes with with the dressing, and the warm and cold components makes everything mesh so well.




















This was the view from the back porch of our cabin. At night, there were so many stars that it lit up the sky. There is something to be said for a vacation in the country like this.

Lemon Blueberry Cupcakes

I made these a few weeks ago because it had been on my mind to try these for weeks. They were AMAZING. Super easy for anyone to make, you don't have to be a great baker.

Take 1 box of white cake mix (any brand, I used Betty Crocker), and only use about 1 cup of the water and substitute the other part with  fresh-squeezed lemon juice (I think it was about 1/4 cup). Zest the lemon and set it aside for the frosting. :)

Then follow the rest of the box directions, fold in fresh blueberries before putting them into the cupcake tins. Cook until you place a toothpick in and it comes out clean.

For the frosting, I used a recipe I found at http://allrecipes.com//Recipe/lemon-cream-cheese-frosting/Detail.aspx however, it  calls for 5 cups of confectioners sugar, but I ran out at 4 and it was perfect. 5 would have made it entirely too sweet.

They were amazing, I want to try this same idea of the white cake mix but try it with raspberries next time. :)

Blog 1. The OG... Where to start, SO much to say!

I guess I will start by deciding what this blog will become. I am a huge foodie and love food from all different cultures so I will post recipes I make that I think are fabulous and everyone should try them! Maybe some great restaurants as I do some traveling. Life as it happens... you know. The everyday things that go wrong, right, and everywhere in between. :)
